Name: Barbera Fermo “La Desiderata”

Grades: 12-13% Vol. (depending on the vintages)

Basic grapes: 85% Barbera, 15% Croatina

Geographical location: vineyards in the first hill Oltrepò Pavese, located in the municipalities of San Damiano al Colle, Montù Beccaria, Rovescala.

Vineyard characteristics: soil resulting from disintegration of sandstones and limestone marl with a high clay component, located at 220/280 meters above.m sea level. Traditional Gujot breeding system and spurred cordon.

Vinification: fermentation with maceration on the skins in steel vats at controlled temperature 20°/30° for 10/12 days. From the derailing and subsequent beams, the product is put in steel tanks for about 3 months. It is then bottled for a slight aging of 2/3 months.

Organoleptic characteristics: intense ruby red color, vinous and fruity scent (reminiscent of blackberry). In the mouth pleasantly tannic and very vinous. To the intense sense of smell.

Serve at: 18 

Food pairings: red and white meats, game, tasty first courses, tasty and seasoned cheeses.
